Years ago we realized that agave syrup is the best sweetener in cocktail mixology, especially regarding tequila and mezcal based cocktails. But until now agave syrup has only been available in health food shops and well-equipped retail stores in versions that far from met our standards for a high-end bar syrup. Our requirements were obviously too high for the perfect bar agave syrup; because what we really wanted was …

# a fluid syrup that can be used directly with no need for dilution with water
# a completely stable syrup with no need to ever shake the bottle to blend water into the syrup
# the highest fructose content and the lowest glycemic index (GI) on the market
# a syrup with a smooth and nutty flavor with a very enjoyable finish and no bitterness whatsoever, that will perfectly sweeten and enhance cocktails
# an origin guarantee, i.e. a genuine Mexican 100% agave syrup made from Agave Tequilana Weber Blue grown and harvested in Jalisco
# an organic agave syrup that meets the new EU standards for organic production
# a bottle that will perfectly fit into the speed rack, since spending time on re-bottling is a waste of time
# a presentation that is true to the origin and reflects the exclusivity of this sweet treasure

Obviously there were no products on the market that fulfilled all of these requirements, and rarely any fulfilling even one of them. Therefore we decided to develop a completely new product that would meet all of our requirements and we decided to name it &Jones Concentrado de Agave Para Bar. The name says it all, the content is concentrated organic agave and the perfect sweetener for lavish agave cocktails!

THE PRODUCT

&Jones Concentrado de Agave syrup is especially developed to be instantly used in bars. Since it is more fluid compared to the products you will find in the health food stores, it is much easier to shake into your cocktails. It also contains a higher amount of fructose, meaning that it has a lower glycemic index. Of course it is also perfect for cooking and baking.

Colour, aromas and taste

As maple syrup, somewhat thick but fluid compared to other agave syrups on the market. Light amber with noticeable elements of caramel. Soft and pleasant mouth feels, with elements of French nougat and nuts. Delightful long sweet finish. The agave sugar gives more impact in cocktails compared to simple syrup (containing sucrose), meaning that you will need to use less. Rounds off and softens cocktails, and is perfect when mixing aged spirits cocktails such as Old Fashioned and Tommy’s Margarita.

Production

We only use Agave Tequilana Weber Blue harvested in Jalisco for making “&Jones Classic Cocktails Agave Syrup”. The agave stems are crushed and agave juice is made. The juice is filtered, then heated to hydrolyze polysaccharides into simple sugars. The main polysaccharide is called inulin or fructosan and comprises mostly fructose units. The filtered, hydrolyzed juice is concentrated to a syrupy liquid that is perfect for mixing cocktails. Our producer owns a patented process, giving higher fructose content and thus a lower GI
